HTTP server response target. Creates a pipeable endpoint that logs out
requests and responses with the proper response size.

## API
### sink = serverSink(req, res, log)
Create a new sink. Takes an HTTP `incomingMessage`, `serverReponse` and log
method (`bole` is recommended, not mandatory).
